What a whirlwind week it's been! Picture this: juggling flames left and right, but also finding unexpected blessings amidst the chaos. Let me give you a peek into my world.
So, I've been knee-deep in the trenches of paperwork, navigating the labyrinth of mortgage assistance for my property. It's been a journey that started back in November 2023, when I realized I needed a lifeline to bring those payments up to speed.
Here's the kicker: initially, I hit a roadblock. Denied because, believe it or not, I wasn't behind enough on my payments. Talk about a catch-22! But this is the reality of our times, right? The hoops we jump through, especially in the aftermath of the COVID pandemic.
But let's talk about resilience. It's about making tough decisions, weighing the options, and embracing change—even when it feels like your brain is screaming "retreat!" Our brains crave familiarity, but growth happens outside our comfort zones.
And let me tell you, it's been a wild ride. Every obstacle you can imagine, I've faced it head-on. Yet, here I am, slowly emerging from survival mode into a place of peace and progress.
And then, a glimmer of hope amidst the chaos. Picture this: a flooded bathroom, courtesy of my curious grandson and a mischievous toilet experiment. But lo and behold, a guardian angel in the form of a sister-friend swoops in—a seasoned contractor with a heart of gold. Together, we tackled the plumbing maze, and just like that, I learned a thing or two about pipes and wrenches.
It's moments like these that remind me: change isn't always easy, but it's where growth thrives. So here's to embracing the unexpected, finding silver linings, and always staying open to the journey.

Ingredients:
4 salmon fillets
500g baby potatoes, halved
Olive oil
Salt and pepper
Mixed fresh herbs (such as dill, parsley, and chives), finely chopped
1 lemon, zest and juice
2 cloves garlic, minced
1 red onion, thinly sliced
A handful of arugula or mixed greens
Optional: capers or olives for added flavor
Instructions:
Preheat the oven to 200°C (400°F).
Prepare the Potatoes:
Toss the halved baby potatoes with a little olive oil, salt, and half of the minced garlic. Spread them out on a baking tray and roast in the preheated oven for about 20 minutes, or until they start to soften.
Prepare the Salmon:
Mix the remaining garlic with the chopped herbs, lemon zest, a splash of olive oil, salt, and pepper. Rub this mixture over the salmon fillets.
Combine Ingredients:

My story took a turn when, at the prime of my life, I faced a near-death experience that crippled me for two years.
