This past week was quite a whirlwind, with one exception - the weekend. My close-knit group of friends recognized that I wasn't quite myself lately and decided to take matters into their own hands. On Saturday, one of my dear friends extended a heartwarming invitation to the Mableton Amphitheatre, where we enjoyed an incredible lineup featuring Con-Funk-Shun, S.O.S. Band, and Morris Day and the Time. Her gesture brought a genuine smile to my face, allowing me to momentarily escape the overwhelming challenges I've been facing while helping others, often at my own expense.

Then, on Sunday, another friend treated me to a delightful outing at one of my favorite cozy venues for live Jazz music, The Velvet Note in Alpharetta, Georgia. We were in for a treat as we experienced a captivating tribute to Earth, Wind, and Fire by the talented Ray Howard Band. It was a musical journey that touched the soul and provided much-needed solace. I'm pleased that I made the most of this past weekend to center my thoughts and prepare myself for the fresh challenges that lie ahead.

Fall Is Here So Bring on the Comfort Food

Healthy Peach Cobbler Recipe

Serving Size: 4

Ingredients:

For the Peach Filling:

  • 4 cups fresh or frozen peaches (sliced and pitted)

  • 1/4 cup honey or maple syrup (adjust to taste)

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon nutmeg (optional)

  • 2 teaspoons cornstarch (optional, for thickening)

For the Cobbler Topping:

  • 1 cup old-fashioned rolled oats

  • 1/4 cup whole wheat flour

  • 1/4 cup almond flour (or use more whole wheat flour)

  • 1/4 cup chopped nuts (such as pecans or almonds)

  • 2 tablespoons honey or maple syrup

  • 2 tablespoons coconut oil (or melted butter)

  • 1/2 teaspoon baking powder

  • A pinch of salt

Shopping List:

  • 4 cups fresh or frozen peaches

  • Honey or maple syrup

  • Lemon juice

  • Vanilla extract

  • Ground cinnamon

  • Nutmeg (optional)

  • Cornstarch (optional)

  • Old-fashioned rolled oats

  • Whole wheat flour

  • Almond flour (or additional whole wheat flour)

  • Chopped nuts (pecans or almonds)

  • Coconut oil (or butter)

  • Baking powder

  • Salt

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, combine the sliced peaches, honey (or maple syrup), lemon juice, vanilla extract, ground cinnamon, and nutmeg (if using). If you want a thicker filling, sprinkle in the cornstarch and mix until well combined.

  3. Transfer the peach mixture into a greased 8x8-inch (20x20 cm) baking dish, spreading it out evenly.

  4. In another mixing bowl, prepare the cobbler topping. Combine the rolled oats, whole wheat flour, almond flour, chopped nuts, honey (or maple syrup), coconut oil (or melted butter), baking powder, and a pinch of salt. Mix until the topping mixture is crumbly.

  5. Sprinkle the cobbler topping evenly over the peach filling in the baking dish.

  6. Bake in the preheated oven for 25-30 minutes or until the topping is golden brown, and the peach filling is bubbling.

  7. Remove from the oven and allow it to cool for a few minutes before serving.
